I am educated and trained as a clinical dietitian and as a chef. After several years of practice in the areas of pediatrics, diabetes, weight loss and cardiovascular nutrition, I decided to pursue training in the culinary field in order to bring good nutrition to people in a practical and hands on way. I formally trained in the United States and Europe in schools, restaurants and inns. In 1999, I opened my first restaurant, Café at the Mall, in order to combine a love of great food with my professional food and nutrition knowledge. I opened my second restaurant, 10 North Trade Café Bakery, March 2003, in Tryon, NC. My mission is to offer delicious foods made into dishes and meals that are healthy and tasty to promote my belief that a part of achieving and maintaining good health is consuming and enjoying a variety of foods.
